Arugula and Sweet Potato Salad with Lime Juice Dressing

A light, fresh and uplifting cooling summer salad.

Serves 4 people

Ingredients
1 large sweet potato peeled and cut into thin slices

Chili oil

½ bunch arugula

2 tablespoons fresh mint

4 finely sliced green onions (lengthways)

Dressing

1 red chili, sliced                       

2 tablespoons tamari

2 tablespoons lime juice        

2 teaspoons rice syrup

Brush sweet potato with chili oil. Cook on a preheated grill for 1 -2 minutes or broil for 1 – 2 minutes on each side or until sweet potatoes are brown. Arrange arugula, mint and green onions on a serving plate. Top with the sweet potato. To make the dressing, combine chili, tamari, lime juice and rice syrup and mix well. Pour over salad and serve.

Salad may be served with chicken, fish, or tofu cutlets.
