Braised Fennel with Red Onion

Autumn: Gather energy inwards with foods that warm your core, keep you strong, and help ward off colds and flu.

Serves 4 people

Ingredients
1 medium red onion

2 bulbs fennel

1 level teaspoon salt

1 tablespoon olive oil

½ teaspoon black pepper

2 tablespoons chopped parsley or basil

Peel the onion and cut into rings. Wash and slice fennel into quarters. Warm the oil in a skillet and add the onions and fennel. Toss gently to coat vegetables in the oil. Cook for 1 - 2 minutes. Add salt and pepper, turn heat to low and simmer for 10 minutes, or until fennel is tender. Remove from the pan to a serving dish and sprinkle with chopped basil or parsley.
