Date Balls

Spring is a time to shift longer cooking styles of winter to lighter methods that assist in the release of proteins and fats stored in the liver during the cold months. Feel the energy of Spring with this fresh, light seasonal recipe.

Ingredients

10-12 Servings

2 cups chopped pitted dates

1 cup sunflower seeds, roasted and roughly chopped

1 cup almonds, roasted and roughly chopped

1 cup peanut butter

½ lemon rind (zest)

2 tablespoons rice malt or 1 tablespoon maple syrup

2 tablespoons carob flour

1½ teaspoons cinnamon

2 teaspoons ginger juice

1 cup shredded (desiccated) unsweetened coconut

Mix all ingredients together thoroughly (except the coconut) and shape into balls. Place coconut on a plate and roll date balls in the coconut to cover. Place in the refrigerator to firm up, serve when you can no longer resist!
